plum cobbler bars with pistachios

Notes: If you cover the pan with foil (even for half of the baking time), it will result in your pistachios steaming, which will leave them softer in the end. Recommend baking the dish completely uncovered if you're looking for a crunch on top.

4 plums + 1 heaping tsp of granulated sugar and brown sugar each.

1/2c softened butter

1/2c granulated sugar

1/4c brown sugar

1 tsp vanilla

1c flour

3/4c whole rolled oats

pinch of salt

2/3c chopped pistachios

1. Dice the plums and bring to a boil with the sugars. Once boiling, remove from heat and set aside.

2. Preheat to 350*F.

3. Cream the butter and sugars for 5 minutes.

-While the mixer is going, prepare a 9x9 pan with pam and parchment paper.

-Chop the pistachios into fine chunks (see below).

4. Add the vanilla, then flour, oats, and salt.

5. In a prepared pan, crumble half to 2/3s of the mix in. It won't cover the bottom entirely--If you want more crumble in your bar, just double the recipe.

6. Pour the plum pieces (not the extra juices) over the oat mix. Layer the remaining oat mix on top.

7. Sprinkle the pistachio pieces on top, as well as a pinch of sea salt.

8. Bake at 350 for 30-35 minutes.
