Yields 1 standard loaf
1.5c all-purpose flour (220g) or 1.5c Gluten-free flour (I used King Arthur)
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ground ginger
1/2 tsp salt
1 Tbsp baking powder
1/2c granulated sugar (100g)
1/2c brown sugar (100g)
1/2c vegetable oil (100g)
2 eggs
1/2c applesauce (150g)
1/2c apple cider
1 tsp vanilla extract
Sugar dusting for top: (all to taste)
2 Tbsp melted butter
Turbinado sugar
Cinnamon-Sugar
1. Preheat oven to 375F and grease a loaf tin, line it with parchment, then grease again.
2. Combine flour, spices, salt, and baking powder. Set aside.
3. In a mixer or with a whisk, mix the cider, apple sauce, oil, and vanilla.
3. Add the eggs to the wet mix and mix well.
4. Add the sugars to the wet mix.
5. Add the flour mix in 2 inclusions. Mix until there are no lumps.
6. Bake 375F for 55-60 minutes. Once it comes out of the oven, top with the melted butter and sprinkle generously with the sugars. Allow to cool in tin for 1 hour.
